Herb Crusted Haddock (or Salmon, or Cod!!) ….

I’ve made this recipe a couple of times recently and it’s always gone down really well with those I’ve cooked it for.

Ingredients (Serves 4):-

1 tbsp olive oil (plus a little extra for drizzling)

4 skinless unsmoked haddock fillets (I’ve also made this with salmon and it was lovely)

2 handfulls of cherry tomatoes

1 crushed garlic clove

3 tbsp of mayonaisse

100g / 40z white breadcrumbs (I use lemon breadcrumbs for extra lemon flavour)

zest and juice of 1 lemon

2 handfuls of flat-leaf parsley (chopped)

Heat your oven to 220c / Gas Mark 7. Lightly oil a large baking tray, then lay the haddock (or other fish) and tomatoes into it. In a small bowl mix the mayonnaise with the garlic and spread it evenly over the fish.

Mayonnaise, Garlic, Lemon Juice & Zest, Parsley, Breadcrumbs

In a separate bowl, toss together the breadcrumbs, lemon zest, juice and parsely then spoon it over the fish. Drizzle a little oil over the fish and tomatoes then bake for 15 minutes or until the fish flakes slightly when pressed.

Ready for the Oven

I serve this with swede and carrot mash.
