Low Fat Jambalaya

Ingredients (Serves 4):-

1 onion

6 Quorn sausages (or other vegetarian sausages)

12oz / 340g ham

2 garlic cloves

2 red peppers

2 sticks of celery

3 plum tomatoes

1 pint / 568ml of chicken stock

1 tbsp of Cajun spice mix

1 bay leaf

7oz /198g of easy cook rice

Salt and pepper

Chopped parsley to garnish

Prepare the ingredients:peel and finely dice the onion; deseed and finely chop the peppers; trim and finely chop the celery; peel and finely crush the garlic; chop the tomatoes; dice the ham; roughly chop the sausages.

Place the onion, peppers, celery, garlic, tomatoes, stock and spice mix in a pan and bring to the boil.

Add the rice, ham, bay leaf and sausages and bring back to the boil. Cover tightly, reduce the heat and cook gently for 12-15 minutes. Remove from the heat and allow to stand for 5-10 minutes. Fluff up the rice with a fork and garnish with chopped parsley and serve.
