This recipe is the 4th of the new recipes I planned to make as part of my January goals. As we’re only 3 weeks in I might be able to squeeze in a couple more which is great as when tidying the kitchen the other day I found lots more that I want to try, including curried potato pasties and some new soups.
2 skin on salmon fillets
1 head of broccoli broken into florets
The juice of 1/2 a lemon and the other 1/2 quartered
A small bunch of spring onions,sliced
2 tbsp soy sauce
Heat the oven to 180c / gas mark 4. Put the salmon in a large roasting tin, leaving space between each fillet.
Wash and drain the broccoli and while still a little wet arrange in the tray around the fillets. Pour the lemon juice over everything, then add the lemon quarters.
Top with half the spring onions, drizzle with a little olive oil and put in the oven for 14 minutes. Remove from the oven and sprinkle everything with soy sauce. Then return to the oven for 4 minutes more until the salmon is cooked through.
Sprinkle with the remaining spring onions just before serving. I served the fish with carrot and swede mash.
