After eating my own body weight in pancakes yesterday I thought a day of mindful eating choices might be a good idea.
This juice recipe is another of Jason Vale’s and is featured in the book ‘The Funky Fresh Juice Book’.
1/2 a medium pineapple
1/4 medium cucumber
1 large handful of fresh mint
1 handful of ice cubes
The original recipe suggests juicing the cucumber and pineapple together then blending with the mint & ice. This seemed like an unnecessary ‘faff’ to me so I simply juiced the mint, pineapple and cucumber together and served over the ice.
The juice is zingy and refreshing and will definitely be a regular on the menu should we get anything resembling a Summer in the UK this year.
