For the first part of the year I am looking for ways to budget better and save a little more cash. Part of this is meal planning, I want to really think about making the best use of ingredients and cutting back on waste.
To start on the right (Fit) foot I’ve made some great soup, freezing the remainder for when I can’t be bothered or haven’t the time to cook from scratch.
The first soup, Broccoli and Stilton, was made using vegetables fresh from the farm we stayed at over Christmas and a wedge of beautiful English Stilton cheese that didn’t get eaten over the festive period.
The second soup, Chicken and Vegetable was made on New Years Day using up chicken from the Roast dinner we enjoyed the night before.
Both recipes were found on the BBC Good Food website and are really good.
